THE RECIPE for Hipster-Breakfast: Flat white with marmalade bread
Ingredients - for four persons you need about:
150 g black beans
½ celery root
1 white onion
2 red onions - best: Tropea-onions
250 ml organic fresh milk
1 lemon
soy sauce / tamari
some white balsamic vinegar
1 sp. cane sugar
150 – 200 ml vegetable stock
½ sp. tandoori marsala
some sea salt
some fresh grounded nutmeg
some black pepper
4 sp. sesame oil
2 sp. olive oil
4 slices of sourdough bread
put the beans one day in cold water, next day cook them without salt and not to much water until they are smooth / clean and peel the celery, cut in cubes and steam with a little water, some salt and juice of the lemon until smoothy, add the milk, mix until creamy and keep it warm /
peel the red onions, cut them in little cubes, put them in a pan with olive oil, a little salt and the sugar, cook them with low temperature until smooth. Add at the end some balsamic vinegar and mix them / peel the white onion, cut in cubes, heat up a saucepan with the sesame oil, cook the onion until smooth, add the tandoori marsala, roast it, add stock, soy sauce and balsamic vinegar, cook it all for 5 min. , add the black beans and mix it until creamy , put some salt if needed
put the cream of black beans in a glass, put the celery cream on top, ground some nutmeg over it and serve it with slices of bread with the red onion marmelade!
